Meet Our Staff
Rachel Burdett, owner and Director of Professional Bartending School of San Antonio, has bartended for over 20 years and counting. Mrs. Burdett currently does private events. She started at a local landmark here in San Antonio, Alamo Café. From there she moved on to Cattle Baron Restaurants in New Mexico. Came back to Texas and worked at Tapatio Springs, and finished at Carrabba’s in Sugarland. Mrs. Burdetts’ experience includes, but is not limited to, administrative duties, payroll and inventory, staff training, point of sale training, recruiting, management and counseling (required of all bartenders). Her expertise is in sports bars, country clubs, golf resorts, and corporate restaurants.
Larry Stratton is our Director of Education and Assistance Director for PBSA. Mr. Stratton has over 40 years experience in the industry including but not limited to restaurants, nightclubs, resorts, and private parties. Mr. Stratton teaches part time. He also assists with admissions and administrative duties.
Mrs. Theresa Haxton has been bartending for over 9 years. Her bartending career started at Cowboy’s Dance Hall. Mrs. Haxton has also bartended at hotels and the airport for most of her career. Like everyone at the school, Mrs. Haxton is committed to our graduates’ success. Theresa continues to do volunteer work for the school as well as private events. Her expertise is in night clubs, hotels, airport bars, staff training, inventory, and administrative duties.
Adam Clay is our Flair Instructor. He currently bartends at SoHo Lounge downtown. Adam has been bartending and competing in flair for over 10 years. Mr. Clay has competed in numerous Flair competitions in and around San Antonio and the country. Adam teaches the very basics of Flair to the more advanced. His expertise includes Flair, bar management, staff training, inventory, nightclubs, and administrative duties.
